Cupid Cakes!


I am not a morning person.
I stay up late every night and realize what a bad idea it was at 6am.
I look like Grumpy Cat from Pinterest when I get up,
and need about 2 minutes with my coffee before anyone talks to me.
My family knows this and respects it.
I taught the kids early on to be self-sufficient in the mornings.
We make lunches and lay out clothes the night before,
and they make their own breakfast.

So when I do something special for them at breakfast time, they REALLY remember.
In fact, they talk about it all day, knowing it is few and far between.

We always have a Valentine's Day breakfast.
This year we adapted the cake-batter pancakes recipe from How Sweet It Is 
and we are making Cupid Cakes!

And we've included some FREE Printables to make your table look like "Cupid's Cafe".
What a SWEET way to send them off to school this Valentine's Day!


Cupid Cakes adapted from How Sweet It Is
makes about 10 heart shaped pancakes

3 cups of all purpose flour
1 1/3  cups of yellow or vanilla cake mix
2 Tablespoons of sugar
1 1/2 teaspoon of baking powder
1/2 teaspoon of salt
4 eggs
2 teaspoons of vanilla extract
2-4 cups of milk
Valentine Sprinkles
Red or pink food coloring

Combine flour, cake mix, baking powder, sugar and salt in a large bowl and mix. Add 2 cups of milk, eggs, and vanilla. Stir until smooth. Continue to add the rest of the milk until it is a nice pancake batter consistency. Add food coloring until you have a deep pink color. Stir in Valentine sprinkles.

If you don't have one of these...you NEED it.
It's called a Pancake Pen. 
I received one for my birthday this year, 
and can't believe I've been making pancakes all these years without one. 
You can buy them at Sur La Table, Williams Sonoma, and Cost Plus World Market.
Just fill the pen with batter and you can make anything you want on the griddle!
The possibilities are endless with this. 
Today, we are making heart shapes.
They cook like any normal pancake.
Next, you'll need to make the glaze.
Vanilla Glaze
2 Cups of Powdered Sugar
1 Tablespoon of milk
1/2 teaspoon vanilla extract 

Mix vanilla and milk and add in powdered sugar a little at a time until you have the desired thickness you want.
Drizzle glaze onto cupid cakes and add a few more hearts!
Make "Heart Strawberries"
Just hull out the top of the strawberry and slice! It makes a cute heart shape!

You can even make the milk "pink"!
Use Hershey's Strawberry syrup to give it a sweet taste!

Now to decorate "Cupid's Cafe"
If you're like me, the decorating can be done the night before. 
(gives me an extra 15 minutes under my blankets)
